Question is pretty simple : is it possible, when building your unraid system, to add a new disk to an array, including complete format / verification of this disk, without interrupting the SMB services (provided from drives that are in array already and also some in unassigned drives (NTFS) waiting to be slowly migrated), or does adding a disk to an array without parity will require complete service interruption while formating the drive for the array ?

Format won't interrupt anything, but you can't change array assignments, whether adding, removing, or changing their order, without stopping the array.
