single machine for two users

So I was looking to find a thread about this, but a quick search didn't hit what I wanted...

I'm looking at building a new desktop, but my wife needs one too. Out desktops sit side by side. Can I make a single machine, with 2 vms, 2 (or more) monitors, 2 keyboards, 2 mice all physically connected to it? Basically assign vm 1, keyboard 1, mouse 1 to monitor 1 and vm 2, keyboard 2, mouse 2 to monitor 2? And more or less not have them interfere with each other? Im thinking to avoid thin clients and any network lag.

Yes as long as your Unraid server has enough resources to give each VM its own dedicated resources.   This will involve giving each VM its own dedicated GPU, RAM, CPU cores and hard drive.   Note also that you will still need to leave some RAM and a few CPU cores for Unraid itself to use.
