I tried to type all of my disks except on in the excluded disks field.

"disk1,disk2,disk3,disk4,disk5,disk6,disk" was as far as I got. This is the maximum you can type in that is 40 characters. With 11 disks in my array (and growing, I will need to type in more for some shares.
