Another update, it appears that issue was lying in one of the services, immich specifically, where one of the containers was failing continually. Since I do not need it at the moment, i just deactivated it without finding out what was actually wrong with it. Now everything is working like normal, no errors anywhere.

Quick update for who might find this thread. Like I said previously, i deactivated all docker containers that are not essential. Those that I have left active have been running long before the issues appeared. Usually the error would come up after around 48 hours of the system running. Now it has been 104 hours and it has not appeared yet. This makes it 99% certain that the issue lays on one of the deactivated docker containers. Now I am setting up graylog to keep track of all the applications that are present in the system at the moment. When I am done with the ones running, I will start activating a docker stack one by one while adding them to the graylog monitoring. Hopefully by doing it like this i will find what is making the server stop working.

Thank you for the update. I am happy to hear that you managed to solve it. Yeah, it is astonishing the amount of time I am losing trying to find what is failing. I don't really want to disable everyhing at once, since the server is actively used, but I will disable everything not essential and try like that. The only thing that is different from your case is that when the errors start appearing, the memory usage is normal. Still, thank you for your contribution.
