    Okay so this may not be a very satisfying answer but I tried all 6 of my SATA cables and had issues, I tried changing the SATA ports around on my motherboard. I saw somewhere on a similar forum post someone was having issues with they're PSU and got similar looking issues. Since I needed a new PSU anyways (I've been using a really cheap PSU I got bundled with a case) I got a new one and a brand new SATA cable. Replaced both and things seem to be back, not sure which was the root cause but for now all is good.
