Solutions

  1. DrowningWhale's post in Server is unreachable after ~30 minutes (USB Ethernet) was marked as the answer   
    Update:
    I realized that the USB error correlated to when something power-related happened in the same room i.e. computer sleep. The server is actually a mini-pc and I believe it was susceptible to the smallest power surges. After putting it on an UPS, I haven't had an issue so far. Very strange that only that USB device dropped out.
