Solutions

  1. Atsukio's post in Unraid booting straight into memtest86 instead of boot menu was marked as the answer   
    So i have some good news, the new flash drive works, for some reason no matter what, formatting etc my old flash drive it always boots into memtest, but the brand new flash drive has 0 issues and boots straight into unraid with the same backup.
    So if anyone else comes across this (i saw someone on the unraid forum have the same issue but wasn't solved), the odd solution is to just use a different flash drive.
