I will spare you with the details of why the drives failed. But they did. My simple question is the following. Can I rebuild one of the three data drives from parity, while ignoring the other two?

    No.   Rebuild requires all drives other than the failed drive to be able to be read without error to run.

    Ok thanks. Is the data on the other drives still ok? Whats my next step?

    You can reset the array to keep just the remaining good drives (tools -> new config), then start the array to begin a parity sync.
