Whereas my Intel Quad NIC has been split into 4 separate, selectable NICs......

 

My reason for asking is that I would like to allocate one of the Mellanox 10Gbe NICs to my pfsense VM and retain one for Unraid..........

 

Or, is that simply not possible?

    Try all the ACS override modes.  If none of them can split it apart, then it's basically not possible due to the design of the card
