Is this proper?

...since I don't want to worry on which disk has how much space, I am planning to make the same root folders on ALL disks in the array.

For example:

Audio

Video

Emulation

...etc. ...maybe 10 folders

So in fact treat it "more" like RAID (but still not the same, but you know what I mean).

Is this too much for unRAID?

Eventually I plan to move to the array EVERYTHING that I don't want constrained in a single computer or in a single installation of a single computer (so even some "Program Files" will end up there - esp. when there is no registry involved).

it works fine.

For exactly the same reasons, i did that when usershares became writeable.

Upside: easy, no space worries.

Downside: I have not bothered with making a structure so I can use "levels" properly, so directories with many files scattered over a number of discs takes a second or two to browse.
