So I plan on moving my drives "as is" from one server to another more powerful one that I already have built.  Is it going to be as  simple as drop all the drives in the new box and move the USB  stick and rock and roll?  Or should I just build the new one on a second install and migrate data a drive or two at a time keeping in mind that I have a few spare drives I could use for this???  I hate to buy unraid twice though...

Usually yes, assuming no RAID controllers involved.
