Replacing 2x Sata SSD Cache drives with 1X NVME drive?

If you can have all devices connected at the same time add the NVMe device to the pool, once the balance finishes you can remove the SATA devices form the pool, one by one, just unassign one of them and start the array, when the balance finishes repeat for the other one.

When you say "Unassign" does that mean unmount them (software wise)? Also - How do I see when the mover is finished?

Unassign means stop the array, click the device and set to none.

There's no mover involved in this, you'll known when it's done when you can stop the array, you can also monitor the pool activity.
