I've just precleared my drives 3 times and started the array without formatting them. It's currently doing a parity sync.

Does it matter that drives haven't been formatted first? Or will I have to sync again?

If so should I stop the sync, format and start sync again.

    Nope, doesn't matter.  You can even format the drives while parity is syncing.  Do not format more than two drives at once, since on some systems this will cause the server to crash.  Just format them two at a time until you get to all of them.
