The other device should not be a problem, post new diags.

To fix the pool issue the easiest way is to re-import it, it should then use the correct profile, to re-import, stop array, unassign all pool devices, start array, stop array, re-assign all pool devices, start array.

Pool cfg is still in single mode, do the above now and post new diags after the last array start.

does it seem weird that there is exactly double the data on the 2Tb drive as each of the two 120's?

No, that's expected, since there are three devices and the data must be mirrored to two, the data on the two smaller devices will be mirrored to the larger one.

Pool cfg is now correct, you should now be able to remove the devices one at a time.

couple more questions kind of linked though.

the pool with only 2 drives in is showing as 98.6Gb used.  given what you said above about data being mirrored to 2 drives i assume this is because the number of slots is still 3?

once I've removed both smaller drives, can I then move/reassign the 2Tb drive to "cache" and change the number of slots to 2 so it will run with 1x 2Tb drive with a spare slot ready for another 2Tb drive when I'm ready?

Ignore that during a balance, it can be incorrect, whatever the GUI shows once the device is removed should be correct.

You can, but you will need to re-import the pool, same procedure as before, but with just the single device.

Click on the first pool device, then scroll until you find it.
