Multiple Cache Pool Question

I'm looking to optimize my cache pool. I currently have a 500GB NVME drive that handles everything.

 

I would like to change it so that the existing cache drive will only handle a single Windows VM, Docker Containers and Appdata, plex meta data and system files and my new 2TB NVME will handle downloads and write it to my Array as needed.

 

Is this the most optimal way to do this? Can this be done with an existing Unraid server or do you need to format everything?

Thanks. Just to confirm, can I do this if I have exsisiting VM's and docker containers?
