Messed up Appdata folder

I was a bonehead, and added a new NVME to my NVME cache pool and started the array.  Lost all my appdata.  I do have backups but a few failed to completely backup recently (not sure why at this point).  The problem I'm now having is that when using appdata backup plugin I go to restore pick the correct folder where the backups reside but under step 2 where you select your backup, nothing appears in the dropdown.  Am I completely FUBAR'd?

    3. Adjust your preference.
