I have a unraid 5.0.6 NAS (no docker) with 4 4 TB drives and 1 TB for cache, the FS is ReiserFS.
I managed to find that ReiserFS supports drives of 16 TB tops (according with wikipedia).

And this post that confirms 5 and 6 TB but nothing above (https://forums.unraid.net/topic/33056-wd-5tb-and-6tb-compatibility-for-unraid/).

Can anyone assure me if this version of unraid is capable of managing disk with 8 TB?
Or point to where is the official doc for this topic.

It is capable, but I would still recommend upgrading to v6 and converting to a different filesystem.

To expand on JorgeB's answer : ReiserFS is EoL and will not be supported in future linux releases.
