Data Drive Failed - Parity Swap - Multiple Drives

UnRaid 7.0.1, I have a 5 drive xfs system, all 3TBs (see pic). I had elected two of the drives to be parity for extra protection. The only spares I have on hand are 8TB and I do have two of them. I also have an 1TB NVME SSDs laying around too and an old PC that was going to be taking over my server duty at some point.. Mostly this is a media and person file share server (or will be), though I do run all of my home lab containers from it. Most important workload is the plex server.

I'm trying to decide the best way to approach this. There isn't much data as you can see..

Any recommendations out there in forum land? Parity swap and single parity drive and then replace data with new 8TB drive? Rebuild new server w/ZFS and manually migrate data? Appreciation in advance!

You can do a parity swap initially; and if you then want to go to single parity, do it after the array is protected again.
