Docker Containers Keep Disappearing

Having a really annoying issue where my Docker containers keep disappearing; it usually happens when Backup & Restore Appdata is running, as I see errors in the backup log. Now my Unraid log is just spammed with this constantly

Usually 2 or 3 random containers are left behind in the Docker screen, but attempting to start them throws an error.

The fix is usually disable docker, tick the "Delete Directory" box, then re-enable Docker. Then I have to use Apps > Previous Apps to reinstall everything. Any ideas on why this keeps happening and how i can stop it?
