Can I do this simply by assigning each of the old HDDs in the array to the right device slots (parity, disk1, disk2, etc) in the new server? Yes. With v5 the order of the data disks is irrelevant. The one you must not get wrong is the parity disk as incorrectly assigning a data disk as a parity disk would lose its contents. The recommendation is to start by only assigning the data disks and then starting the array to check that everything is OK. If any disk shows as unformatted at this stage you may have tried to assign the parity disk as a data disk. Once you are happy everything looks OK, you can stop the array; assign the parity disk; and restart the array to do an initial parity sync. One thing to note is that once you have enabled User Shares in the settings, then any top level folders on the disks will automatically be treated as User Shares with default settings. If you do not want default settings then this is the point at which you tweak the share settings.
