TLDR I would like to back up my plex data.
I have the official plex docker, how can I navigate to the metadata and back that up?

    It should be located wherever you mapped /config.

    For example, my docker mapping is "/config > /mnt/user/appdata/plex".

     

    I would go to my shares, click:

    appdata > plex > Library > Application Support > Plex Media Server > Metadata
