If I have all my music on unraid can I access it from multiple computers ruining iTunes at the same time or will it corrupt iTunes?  What I mean is iTunes ruining on my desktop and iTunes ruining on my laptop at the same time.

    You should be fine.  I have done it a couple of times and have not had a problem with it.
