100% Cpu 99% Ram ramdomly

Hello, I recently made a minecraft server and I see that at a random moment, (whether a player enters, or ramdomly) the processor and ram go to 100%, this causes the servers to freeze, they get corrupted the worlds and the webgui and other pages are very slow

I entered the console and put htop and I see that the cpu is not being used at 100% and after a while with the htop open everything returns to normal

I need a way to fix this as it ruins the gameplay and other things I have

CPU: i5-4690k
RAM: 8gb
