Unraid always uses the sdX identifiers, since the pool devices are assigned, there's no issue if those change, it will use the new ones.

If your hardware allows is it you could just passthrough the 2nd NIC to the VM, if not, you can create a bridge for the second NIC and select that as the network source for the VM.

There are still filesystem issues, that's strange since xfs_repair usually only requires one run, but run it again, since there's no parity, just stop the array and type:
xfs_repair -v /dev/sdb1
Then post the results from that.

MAC SMB with Samba opens another can of worms, and I don't use Macs so cannot help, but there are some threads here with settings that myy improve SMB performance with Mac, start with this one, you can also search the forum for ore tips:

Exclusive shares should never cause a performance degradation, most times it should be faster, or at least the same, don't really trust that as a benchmark, recommend testing with an actual large file transfer using Windows explorer.

These usually mean a flash drive problem, you can try backup and re-formatting first, if issues persist, replace it.

OK, in that case you can rebuild disk1, you can then move any data back there, if you want.

Reboot to clear the logs and post new diags after array start.

Type N and Enter to keep the signature, then type write and Enter to write the new partition layout, then post again the output of
btrfs fi show

Now start the array in normal mode, the disk should mount, check contents to see if they look OK, also look for a lost+found folder.

I don't know since I never used a Dell server, but pretty sure those entries were caused by that.

Regarding the pool devices, we can try to recover the partitions, but it will only work if the controller is showing the same sectors and/or the superblock was not wiped, and I believe both can happen with those controllers when you change mode, but it won't hurt to try, type:
sfdisk /dev/sdx
then write 2048 and hit enter, post the output of that

That should not make the server crash, unfortunately there's nothing relevant logged, this can be some hardware issue, one thing you can try is to boot the server in safe mode with all docker containers/VMs disabled, let it run as a basic NAS for a few days, if it still crashes it's likely a hardware problem, if it doesn't start turning on the other services one by one.

Syslog is filled with call traces, looks more like a hardware issue, RAM speed is not visible in the diags, check here to make sure it's in spec for the config:

Disk1 is set o xfs-encrypted, click on it and set it to xfs.
