What about the specs of my config what do you guys think ?

There is really no such thing as "overkill" with unRAID.  Your server may be too powerful initially for what you want to do but unRAID always has a way to use that extra power as your needs grow.  I always say to buy the best you can afford now and if it overkill, you will eventually find a way to use it.  The worst thing you could do is not have the hardware to meet your basic needs.

I am not big into gaming/VMs nor do I host a website on my server so I am not a good source for hardware needs for those things.  At first glance, it looks like the hardware you have specified should be able to handle what you need.

My main server has an 8-core 16-thread Xeon CPU and I feel like it is idle most of the time.  It's like I have a Lamborghini in the garage and rarely take it out on the freeway let alone to a racetrack where I can use all that power.

I bought a case that can handle up to 8 hard drives (plus 4 2.5" SSDs and an optical drive) even though I currently only use about half that.  Storage needs always seem to expand.

I mean i'm not sure 500W is enough, maybe 600W would be better but I don't want my NAS to consume too much electricity.

There are very few quality 500W PSU's out there.

Besides, you don't simply save on electricity by going with a lower wattage PSU.

The main concern is the overall quality of the PSU and to the lesser extent its power efficiency factor.

You can read more here for a simple explanation:
