Use an empty disk from the array to replace a failed disk

That is not a supported option.

 

once a disk has been added to the array and formatted then it is no longer ‘empty’ as far as parity is concerned because although it may not contain any files it has the directory structure representing an empty file system that was created by the formatting process and parity had been updated to reflect this.

You have functionally already taken one drive out of the array: the recently deceased drive. You must now add an additional drive to the array and allow that drive to be rebuilt from parity. Your "empty" drive is fully assimilated into the party maths and must be accounted for thusly. It cannot be removed until after this procedure has been followed.
