Disable docker and VM services and reboot in safe mode and see if there's still activity.

The Problem is, this server is new. unRaid new installed. Only some plugins are installed. no docker no vms at the moment.

befor the Array HDD starts read so much i fineshed a copy process from Windows to unraid Share.. it was round about 1.6 TB.

EDIT:

In safemode and array is startet. there is no read process...

i dont understand this... where is the problem

Boot into safemod

Reboot in normal mode and leave services disabled, if still no reads is rules out any plugins, so start enabling the services and containers one by one.

he used zfs on the array... that should explain everything!

BAD MISTAKE!!!

(ZFS + Parity do not go well together, zfs tends to "optimize" during free time and parity needs to be updated all the time, this slows things down to the knees... )

(this is overkill! UNRAID  Parity  + zfs mirror. Get rid of one of them ASAP!)

What FS Type should i use? BRTFS?

No.   Parity only works at the block level and does not understand file systems.   You would have to copy the data elsewhere first before reformatting to avoid data loss.

OK Which Format should i use then?

For array drives i still use xfs. Not fancy but rock solid.
You can use btfrs or zfs on "pool" disks.

Really up to you.    I personally prefer XFS on array drives as being the more robust and performant, but BTRFS is a good chance if you have reliable hardware and are worried about data integrity as unlike XFS it has built in check summing.   BTRFS though is more likely to have issues if you have unreliable hardware (in particular RAM issues).

ok, thanks. So there are 2 or 3 Answeres, wich are solutions...

I will use XFS, but i use an CHINA Mini PC the AOOSTAR R7. and i dont think my hardware is reliable
