Messed up big time, tried adding a 2nd Parity Drive.

Well, I don't have any other ideas for Unraid to help with that disk. But I encourage you to try UFS Explorer on that disk.

 

Format doesn't change most of the bits on the disk, it just writes a few bits that represent an empty top level folder. But that empty top level folder is what the OS sees when it tries to mount the disk, and that is how the contents of the disk are presented.

 

UFS Explorer can probably go through all those remaining bits and try to makes some sense of them.

Got my data back using some free software I found on this sub Free XFS File Recovery Software. Thanks for all the help trurl, I actually learned a lot. Backup your server, parity isn't a backup.

Not clear what specifically you used, since that is just a link to a Reddit thread. Do you have a link to the actual software? Could be helpful to others.
