Need to Recreate Docker.img

I've been having all sorts of stability problems with Unraid, which after a lot of research seemed to be a corrupted docker.img file. I read online that if docker.img is deleted it's automatically re-created upon reboot, but that's not happening for me. I tried disabling and re-enabling docker in Settings and neither work - I also checked the /system/docker/ location where the image should be and there's nothing there.

 

There's a thread on this from years ago but unfortunately none of the information here helped me:
