yesterday i have recovered (hope all data or anyway most of all) with ufs explorer and now i'm formatting disk3.

Then i'll go to copy recovered data onarray

Does anyone have a link to a guide for creating a backup of my array so I can format without problems? a second pool in raid with the first? or any other kind of solution

You can create a raidz1 pool for example, and use rsync to copy the data.

a second pool? or modify my pool?

Is possibile to "compress" data on a second pool and use rsync or other app to copy/backup data?

I meant a second pool. Zfs supports compression, you can enable that when creating the pool, but some data, like media files, is usually already compressed, so that won't compress much, if anything, other types of files can compress a lot.

At least, that's without redundancy, but for a backup may be enough, and certainly better than not having one.
