LibreELEC/OpenELEC VM Templates or Custom won't run

I've tried every configuration I can think of, followed the guides but cant even get them to boot using VNC. I get an error:

Xorg server failed to start

GPU not supported

The annot]ying this is I have had them working in the past then after a reboot or something they refuse to boot, it seems like a random issue. Very frustrating.

I don't get any hardware group issues but have tried with or without 'Enable PCIe ACS Override'.

If anyone can help that would be great, I am tearing my hair out. :)

Below is an example of a VM that has been working fine but now refuses to work. I have a few more with the same issue...
