I have binhex-plexpass docker installed and would like to setup remote access so I can stream way from home.  I see that my plex server has the same IP address as my unraid server if I forward the ports necessary for plex to that IP address will that also open up my unraid server to the internet?

Yes.  For Plex's purposes

The only port that needs to be opened is 32400 by default, that won't allow access to the Unraid webui, just Plex and remote streaming.
