Having set up shares on my NAS, I have started loading Films onto the NAS (using the "Films" share). I'm already using PLEX on my Windows PC but now want to extend PLEX to the NAS.

 

I've downloaded the PLEX docker successfully but I'm having problems getting it to "see" the Films I've loaded. I found a Youtube video online but it was for a different version of unRAID and the screens don't match my version. Could someone please help walk me through the correct mapping required and then the appropriate settings in Plex itself?

Which Plex Docker are you using?  FYI, there is generally a support thread for most Dockers that's the best place to get specific answers.

Didn't realise there was more than one, but it's PlexMediaServer that's on the Docker page in v6.3.5.

 

But thanks anyway, I'll find the right forum and post there.

Yes, there are several.  Linuxserver.io and Binhex are preferred, along with the distribution from Plex themselves.
