New Unraid Build for merge two servers in one

Hi community, I want to build a new server with this specs:

I5 8400, Asus Strix Z370-H, 650w Gold EVGA psu, 16gm ddr4 of ram in a nzxt 440 case.

Right Now I have two unraid Servers, both of them ia HP Microserver Gen8.

Server 1: Intel® Xeon® CPU E3-1265L V2, 16gb of ram, x4 - 3TB  Red Drives (I use it for plex)

Server 2: Intel® Xeon® CPU E3-1220L V2, 6gb of ram, x3 10TB iron Wolf nas (for my photography files), 1x 2tb drive for surveillance (4 cameras)

I Want to merge both server in one, witch is the safes method for don’t lose any information all of my drives are in xfs.

Please I would love some advice
