So I've been running my VMs off of an unassigned M.2 drive and it routinely wanders above the preassigned temperature warning settings built into unraid. Changing the these settings for an assigned drive is easy enough, but is there a way to change them for an unassigned drive? I'm running the unassigned devices plugin if that matters at all.

Not currently, as a work around you can set your defaults to whatever value you want for the NVMe device, then change all the array/cache disks to the their intended values one by one, but note that if there are any more unassigned devices they will all have the same settings as the ones you chose for the NVMe.
