So I see from many screenshots that they have glossy style icons, and mine are flat / plain icons, is there a setting or an addon to change them?

Version 6.7.x ditched the colorful "glossy" icons in favor of the "flat" monochrome icons.  Screenshots with the colorful icons are from versions of unRAID prior to 6.7.x

AFAIK, no.  That is something you would have to take up with @bonienl 

 

There was a bit of a push back from some when the icons changed and there were other requests to provide the option to use the "old" icons; however, that kind of died out given other higher priorities.

No, but plugin authors have a choice for their plugins.
