Diese Beiden "Firmen" würde ich komplett außen vor lassen...
Ich benutze seit 2010 nurnoch ASRock, weil die Boards einfach funktionieren... über Jahre hinweg.

For the 10-20 "transcodet" Streams: The iGPU of my i7-9700 can handle 6-8x 4K to 1080p/8Mbit
The CPU itself can handle 0,2x 4K-Streams 🤣
For more you need a much stronger GPU like a Nvidia Quadro or so...

2,5Gbit has a max. throughput of 312MB/sek (2500 : 8 = 312) - so your 300MB/sek are pretty well on the limit - all ok👍
My 10GBit-Adapter has a max. of 1250MB/sek and reaches 1150MB/sek.

My CPU is a Coffe Lake R and is listet as "S" - the S was the 8th series so i think its "just" a typo (?)
On the other hand, the 12th, 13th and 14th generations are pretty much the same

Check all cables (if the SSDs are SATA) and the PowerConnector too.
If the SSDs are NVMe's, check if they sit "properly" into the slot on the MB.

AMD is not recommended... BIOS, RAM, Mainboard or other incompatibilities... it can be anything - take your pick

Is it possible to mirror the syslog to an unassigned device?
Would be better then the "weak" USB-Flash...
I've been wondering for years why you can't move/mirror the syslogs to an SSD...
The USB drive is a very bad choice...

I cant recommend this cards because the cheap ones are old and used.
I would use 2x TP-Link TX401 and a propper cable.
This card is similar to the Asus XG-C100C what i use but with a WOL-function.
The Asus 10GBit-NIC is working since Oct.2019 without issues.
