Solutions

  1. SupremeArmchair's post in Plex docker shows unhealthy after power outage, no change after deleting image or restoring from backup was marked as the answer   
    For others with this issue, I found the solution here. Essentially, if you have a backup of your "Preferences.xml" file, if you just copy that over it's all fixed!
