The shares are still there but cannot access through file explorer except for 1 out of 3 shares. The other two not accessible seem to be not public, but can't set to public in Unraid for the shares. I can access the shares via File Manager and can see data within the shares. I was going to try running New Permissions in Tools on the two shares, but unsure if that's advisable.

Since you edited your first post with your diagnostics, anybody who had already read it would have no way of knowing there was anything new to see and so those who were trying to help might not visit the thread again unless somebody made a new post to the thread.
