Is it possible not to format the disk during setup and just install the OS for each VM? Thanks in advance.

Please clarify you question. What disk? What setup? What are you trying to do?

I currently have 1x SSD, 1x HDD, 2 GPU (GTX 1060) (GTX 460). I want to setup 2 gaming setup. I have files on both SSD and HDD. My question would be, can I setup it without formatting the disk(s) just like on VMware?

You might be able to mount the disks that have existing data on them using the Unassigned Devices plugin. But I don't know if you can do that without creating an array with another disk first, and that disk would have to be formatted by unRAID. And I'm not sure there is any way to create VMs without having an array either.

 

unRAID is really a NAS product that has some VM hosting capabilities.
