How do I make a drive secure by situ?

I have some 8tb drives that are not encrypted and I want to have them encrypted.

Would there be a way to remove the drive and re-add it and have parity rebuild the drive as encrypted.

I tried to offload the drive first with unbalance but that takes way too long.

I tried this before with one of the drives and it ended up wiping out all data on the drive and there was no way to rebuild it.

No. Parity has no concept of files or file systems. It will only rebuild the drive with exactly the same bits as before. If you attempt to format the parity emulated drive, it will do just that, and wipe out the contents, as you found out.
