unRAID project: VM for photo and/or video editing...

I have 2 projects i'm working on:

Both are separate unRAID installs, but I think they overlap in some of the hardware design aspects.

I'd like to create a VM (win10) for photo (or video) with access to the primary unRAID storage, as well as some kind of higher speed storage that can handle big file access, possibly a multi-disk RAID0.  I'm thinking also of a separate video card, dedicated to the VM, for use by the rendering software(s).  The base hardware would be an HP DL380 system, like in my signature.

I'd appreciate it if anyone has any suggestions and references I can look at to learn what I'll need to make this happen.
