Go to Settings - Docker and disable dockers, then it will let you delete the image. The docker image is where all containers executable code is stored. It is also where a container will write if you make it write to anything that isn't mapped, which is what you did before.

Those diagnostics look OK, but I can't really tell from the diagnostics how you installed plex. The last screenshot you showed for a plex docker install was wrong.

 

Let's try this, since it will give you another way to get us the information for any of your docker setups. Post the docker run command for your plex docker as explained here:

Waiting for the docker run command. I am going to quote the part of the linked post here. It is very short, not complicated, and shouldn't take long to get it and post it.
