    I may have solved this. I opened an incognito page in my browser and where the area for the server, and it looks like it's starting fresh from the beginning.

    Thought I'd provide an update just in case experience can help someone else....
     
    I HAVE IT WORKING! 
     
    I made some changes to the BIOS. Said no to 4G cryptomining, and told it to use the Internal graphics. I also swapped the GPU's and it looks like the reason why one starts with a number and then other a letter is because instead of using a '10' it used a letter. 
     
    Started the MACOS VM and this is what showed up on the screen:

    I saw this as an improvement coz there was a change. Then I remembered I created the VM using a virtual display and a GPU, so I removed the virtual display and WOOHOO, it now works!!!

    Solved the issue. I went and downloaded the bios online father than extracting it. Then I edited the file using a Hex Editor on my mobile phone and removed a section just prior to where it states that it's a video card. I then replaced the rom file in the template with this new edited one, and immediately Windows recognised the GPU.

    It's working now. 
     
    * Checked the unRAID thumb drive and it seemed to be working fine. 
    * Copied everything on it and saved a copy on the laptop. 
    * I noticed that the EFI folder had the little - after it, not sure why but anyways, I removed it. 
    * I then ran the make bootable file. 
     
    It still didn't seem to work, so I decided to reset the BIOS. After doing so, I turned the computer on, then it ran for a couple seconds, turned off, and then turned back on again. I then got confirmation on the monitor that unRAID had booted. I logged in via IP address and it's all up and running. 
     
    Maybe later I'll try and gain access to the BIOS to make changes, but at the moment it's running. I do have a Windows VM that had my video card attached to it, so I might have to make BIOS changes to get that working, but that's for another day. 
     
    While this time I didn't get any replies to my help request, I have received heaps of help in the past and using some of that info was what enabled me to get my server running again. So thanks everyone!!

    I managed to find a couple old internal drives, which I've installed. I am currently transferring data to one of them now, and I'm getting between 100 and 200 MB/s, so it's pretty clear to me that the issue was the drive.

    Update-
     
    I've been able to get into the server, albeit only in safe GUI mode for some reason, and I've changed its network credentials back to IPv4 only again, and I'm again able to find the server on my network. 
     
    I'll mark this as resolved, but if anyone has any good advice or links to good guides which help transition from IPv4 to IPv6, please let me know. Cheers!

    UPDATE - SOLVED 
     
    Firstly, thank you again to those who chimed in to help. 
     
    I copied the files on the USB stick and then formatted it. Then I did a new install. Then I copied over the CONFIG folder.
     
    I was still having issues with it not completely loading. The only way I could get it to work, was to enter into the BIOS first. What I've done is set the BIOS so it doesn't start up so fast. 
     
    I've also just bought a licence and this has been entered into the server with no issues. All my drives were placed in the correct positions and all my shares are there. 
     
    Now time to finish the setup and to start working towards realizing unRAID's full potential, so I'm sure you'll see me about over the next few weeks!!
