Don't really know what the issue is or whether reinstall would help, but it can't make anything worse

Though some of the symptoms are suggestive of a flash problem

I will, a little later today, unplug the server from the network and reboot it. That should eliminate anything triggering the ftp, correct? Would a flash problem trigger the ftp?

It isn't clear that anything is using ftp. The entries in your log about that have the IP of localhost, so I assume they are just being generated by the FTP server starting up.

Is there a way to disable the ftp server in such a way that it is no longer - self enabled?

Settings ---> FTP Server --> Disabled?

Already discussed on previous page. Since it doesn't seem to stick that is one of the reasons I suspect a flash problem.

Yep. Every time I do that, and set it to disabled. I can set it to disabled, work back and worth within the server, and it stays turned off.  However, it reverts to enabled upon restart.

Yeah, that's a quirk.  It is disabled if there are no users defined

Do you think that it could have something to do with me uninstalling / reinstalling and configuring with nextcloud/mariaDB/swag dockers? I am having trouble with those as well.

Should have nothing to do with them at all I would think

Many of your symptoms are suggestive of flash drive problems.
