Changing my vm dirty cache numbers didn't change my network transfer speed, but they made my average parity check go from 180Mb/s to 970Mb/s.

This can't be, and also can't be related to the dirty RAM settings.

 

If I understood correctly you're copying from a Windows VM to the array, lots of other things can contribute to copy performance with a VM, it would be easier to first test speed from a separate desktop to the server.
