The usual cause of filling docker.img is an application writing to a path that isn't mapped. Making it larger won't fix filling it, it will only make it take longer to fill. You have a few things you need to take care of according to Fix Common Problems. Let us know if you need help with that. The version of Unraid you are using has a bug in diagnostics collection that doesn't give us any information about which disks your shares are using.
