I'm going to pop in here and suggest an alternative route.

 

From the apps tab, search for Plex.  Then install the one named binhex-plex.  Don't touch anything on the template.  Simply hit Apply.  It's already set up properly out of the box.

Implication being other containers aren't which is incorrect.

Whilst that will work for Plex, OP is still going to have no clue how docker works and struggle with installing anything else.

Not at all.  If we can get one container working for the OP then there's a better chance of understanding what's going on rather than going around in circles.

Stop the linuxserver version, restart the binhex version, it'll work.

Your media will be in /media
