After much troubleshooting, components testing and buying parts, it turned out that the issue was a faulty MB. I bought new RAM and the issue still happened, changed the CPU and same, changed HDDs just in case and no different. Bought and installed a new MB and haven't had an issue. No idea how the MB went bad or what in it is but that's what it turned out to be. As JorgeB stated above, logs didn't give any specifics but it all pointed to hardware. Identifying which was the headache but that's all past now.
Hope anyone who reads this gets to identify their issue faster than me and cheaper as well LOL.
