It is unable to write your disk assignment configuration (config/super.dat) to the flash drive for some reason, but it isn't clear why. Do you have the flash drive write-protected? Are you booting from a USB2 port?

That seems an unlikely fix. Whether or not the .cfg files for your shares exist, you should still have shares, so it is unclear whether or not you have actually fixed anything. Also seems extremely unlikely to have anything at all to do with this release. Don't be surprised if you still have some problem you haven't correctly diagnosed. Are you looking inside the container at etc or just in Unraid?

Even without configs (which are where they've always been) you should still have shares, since the shares are simply the top level folders on cache and array, and if there are no cfg files for a share it has default settings. So you are having some other problem, probably better suited to its own topic in General Support. Post there and be sure to include your diagnostics.

At the command line, enter diagnostics and the diagnostics will be saved to the flash drive, then you can get them from there for us.

It doesn't reformat (since the format is part of the rebuild) but it does rebuild the data that was on the drive. Unfortunately, that data is a corrupt filesystem. Rebuild can't fix that. On mobile now so haven't looked at Diagnostics yet. For future reference, Diagnostics already includes syslog.

The log I first saw didn't have a successful ssh login, or even many attempts. Not sure about the ftp, but I think the builtin ftp only gives access to /mnt if I remember correctly. How long were the ports open?

That's what I did when I was testing my rebuild. It is a web interface either way. The gui mode is just a simple linux desktop with firefox browser installed, and that firefox is using the web interface. And other computers on the network can use that same web interface.

That indicates Unraid and its docker system is configured OK and working correctly, and I didn't see anything in diagnostics that would make me think otherwise. So your plex is the problem. You are using the "official" plex docker, and it doesn't have a support thread on this forum. Have you asked for help on the plex forum? You might try setting up another instance of plex and see if that one works. You would give it a different name and a different appdata path. You could even try a different plex docker. I personally use the linuxserver plex.

If you reinstall one of those, does it work?

Unable for one way BUT not for the other way. I suspect you meant one of these was working since you said BUT. Did you mean to say you are able to use ssh?

Go to Settings - Docker and disable dockers then reboot
